Will Tupelo Honey sugar? Eventually all honey will sugar. Some honey varieties will sugar in weeks if exposed to the right temperatures. Around 55 degree F is the perfect temperature for honey to sugar, so putting honey in a refrigerator will increase the likelihood of honey sugaring. Tupelo Honey has a different sugar makeup than other honey varieties, different particle shapes that resist sugaring, which is the reason why Tupelo honey takes a long time to start sugaring. Tupelo Honey has a very high fructose makeup compared to most honey varieties which doesn’t sugar readilly. The higher the Tupelo content of the honey the longer it takes to sugar but eventually even 100% Tupelo will sugar.
Raw Honey vs. Non Raw Filtered/Heated Honey: Most grocery store/big box store honey is ultra filtered and heated which removes almost all the particles naturally found in honey, these particles are the biggest reason for honey to start sugaring and why the filtered, heated honey takes longer too sugar. Raw honey has not been filtered, only strained to remove the large wax particles, bee parts and any foreign materials that happen to get in the honey during the collection process. Raw honey will and does sugar and this doesn’t mean its bad or spoiled, it has just changed forms. Light heaitng, 90 degress F, will change it back to liquid. Placing in your vehicle, not on dash, during warmer months will convert it back to liquid.
